When limes went on sale 10/$1, I decided it was time to take a shot at making homemade lime-cello. This is a decent recipe to start with, but not quite sweet enough. Next time, I would reduce the lime juice to 1/4 cup and increase the water to 3/4 cup, as well as increasing the sugar an additional 1/4 cup.
LIME-CELLO
4 limes
750ml Vodka, 100-proof
1/2 cup lime juice
1/2 cup water
1 cup sugar
Zest the limes, making sure that you don’t get any of the white pith. Place in a 1-qt mason jar and top with vodka and a lid. Shake gently to mix.
Place in a cool, dark place for 2-3 weeks, shaking daily for the first week and every 3 days afterwards. The infusion is ready when the zest has become very pale.
After limes are zested, juice them and reserve in the fridge until infusion is ready.
Dissolve sugar in water. Stir in lime juice and infusion. Strain through coffee filter. Bottle and age for 2 weeks.
