Roasted Okra

Okra can sometimes be slimy which turns many people off from it. This is made with a pre-soak in lime juice to help eliminate the sliminess. Cooking at a higher temperature also helps to dry the okra.

Roasted Okra

ROASTED OKRA

1/2 lb okra
1 lime, juiced
1 Tbsp olive oil
1/2 tsp kosher salt
Pepper

Preheat oven to 425F.

Cut the okra into 1/2″ rounds. Place in a bowl and add just enough water to cover. Mix in the lime juice and set aside for 15 minutes.

After 15 minutes has passed, rinse okra and toss with oil and salt. Spread in one layer on a baking sheet and roast 15-20 minutes, until lightly browned and dried.
