This is a quick and relatively healthy breakfast that comes together in under 30 minutes with less than 5 minutes of active work. Top it traditionally with lemon juice and powdered sugar or add fresh fruit or cream.
1 cup all-purpose flour
1 cup milk
1 tsp vanilla extract
1 Tbsp sugar
1 Tbsp butter, melted
Preheat oven to 475F. While oven is preheating, place an 8″ cast iron skillet with the butter in the oven.
In a bowl, combine remaining ingredients mix until combined with no lumps. Pour the batter into the cast iron skillet when the butter is finished melting.
Bake for 12-15 minutes until nicely puffed and browned. Remove from oven and drizzle with a squeeze of fresh lemon juice and a dusting of powdered sugar. Serve immediately as it will deflate quickly.
