Vegan No Bean Chili

This bean-less chili replicated the texture of ground beef. An adjustment of the seasonings would make a delicious vegan sloppy joe mixture.

1 Tbsp olive oil
1 small onion, chopped
2 garlic cloves, minced
1 tsp oregano
1 tsp cumin
1/2 tsp paprika
1/2 tsp cayenne
1/2 Tbsp chili powder
1/2 cup bulgur
1 Tbsp low sodium soy sauce
1 Tbsp ketchup
1 can Rotel sauce
1 can water
2 Tbsp tomato paste
1/2 Tbsp Worcestershire Sauce
1 Tbsp BBQ Sauce

Fry the onions in oil until soft, about five minutes. Add the garlic and cook another 30 seconds. Add all the spices and stir to combine. Add the bulgur, soy sauce, and ketchup and mix.

Add the rotel. Fill the can with water and add to the other ingredients. Add the tomato paste and bring to a boil. Reduce heat to low and simmer covered for 25 minutes.

Taste and adjust the seasonings. Add water to adjust consistency.
