Banana Bread

The perfect way to use up overly ripe bananas. This tastes more of a spice cake than banana bread.

Banana Bread

4 ripe bananas, smashed
1/3 cup melted unsalted butter
3/4 light brown sugar
1 egg, beaten
1 tsp vanilla
1 Tbsp whiskey (optional)
1 tsp baking soda
1/8 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
Pinch ground cloves
1 1/2 cups all purpose flour

Preheat the oven to 350°F.

Mix butter into the mashed bananas in a large mixing bowl. Mix in the sugar, egg, vanilla and whiskey, then the spices. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix.

Pour mixture into a buttered 4×8 inch loaf pan.

Bake for 50 minutes to one hour, or until a tester comes out clean. Cool in pan for 20 minutes. Remove and slice to serve.
