Eggless Waffles

These waffles actually improve after resting in the oven for a bit. They become crispier and the coconut flavor is more pronounced.

2 cups flour
4 tsp baking powder
2 tsp sugar
4 Tbsp unsalted butter
2 Tbsp coconut oil
2 cups milk
2 Tbsp water
1 teaspoon vanilla

Preheat oven to 300F.

Combine dry ingredients in a bowl.

Melt butter and coconut oil.

Add wet ingredients to dry ingredients and whisk to combine. There will be some lumps. Let rest for 5 minutes before making waffles.

Place finished waffles on a cookie sheet in the oven for at least 15 minutes prior to serving.
